Christmas Eve, Taken by Cristie

I've really been enjoying the christmas season and life in general lately. It's a happy time of the year. There has been lots of eating, lots of presents, lots of family, lots of love. Christmas morning Joe and I spent most of the morning sleeping in, there's been lots of catching up and extra sleep since school being out. We opened presents, made cinnamon rolls and headed out for sacrament meeting. It was an extra special day spending an hour of it with the ward pondering the saviors birth. I couldn't help but feel my heart swell with gratitude. It's such a special time of the year.

Happenings..

**ahhhh (*sigh of relief*) School is over. For now. The day we finished up our finals Joe and I headed down to Vegas to celebrate!... I'm only kidding...but seriously we did do a little celebrating at Joe's work party. I watched him gamble, and got to meet some of J's work friends. It was fun matching faces to people J talks about. It was a great way to end a stressful day of finals.

**Joe turns 24! What a treat it was to spend together not having school on our minds. We had dinner at market street grill. J recommended the haui tuna, and thats just what I got, J had lobster tails. Such a classy place, good service, food was delicious, it was a perfect night. Happy Birthday to My Love.

**2nd Anniversary. Joe and I celebrated our 2nd wedding anniversary. I love to think back to that wonderful day.  I cannot believe that it has been 2 years. We have truly, truly been blessed to have one another.  Joe is my best friend. I can laugh with him, cry with him, be crazy or weird or goofy with him, and he's right there being crazy and weird and goofy right back. Since being married I sometimes find myself getting uptight and inpatient. J is always there to help me let loose and just have fun, and he can always bring a smile to my face. May sound cheesy or cliche but we really compliment each other, his strengths are my weaknesses and his weaknesses are my strengths. I don't know what I would do without him. He's my best friend and I love him more than I can express.


We  had a simple day cleaning, and attended a SL temple session. J surprised me with the prettiest ornament. It's been his tradition to give me an ornament each year! I LOVE it.

Mother..50 and counting..

Mother turned 50 on Saturday. Saw her sunday for a short while, caught up, and went  through some old photos of the family.
I'm so grateful to have such an amazing, beautiful, caring mother in my life.

She's taught me so much:
- How to cook
Mother assigned us a day to help cook a meal once a week. (I don't know how many times I asked her to help me make pineapple grilled cheese sandwiches. Granted, I mostly just didn't want to make it so she'd "show" me, but really I just let her do all the work- even though she knew it, she still was patient with me. ) 
- How to clean
As kids, we each had responsibilities around the house everyday. Mother was great about helping us in the process. 
- How important it is to laugh
(us kids give her a hard time, but she always laughs along with us)


But more importantly she taught me:
- patience
- unconditional love
- how to work hard
- how important service is
- how to fully engulf yourself in the gospel
- to always see the good in others
- to trust my instincts
- to step outside my comfort zone
- to listen
- how to have a good relationship with my husband
and some day,
- how to be a good mom

I can't thank her enough for her amazing example.

This day reminded me of how blessed I am.  I'm thankful to have Joe by my side. J is just the greatest. He's defiantly my missing piece. He keeps me grounded, makes me laugh, he's a smarty pants, he's pretty handy...  He's my best friend. I love that I always have someone to share my time with, that is quite a blessing. The gospel is a blessing. Through the gospel, we are able to be together for eternity, now that's a huge blessing. It was a fun day hanging out with J. I am lucky to be married to him.

Michael and his companion Elder Wood had a baptism in Florida on Saturday morning. Matthew Cleveland (22 yrs old; 2nd from the left) wanted to be baptized in the Gulf of Mexico. Brother Jim Johnson (a friend and member of the ward) performed the baptism.

Halloween 11'

One of my favorite times of the year. 


Greg brought Jaxon over to my folks for his first trick or treat, what a cute teddy bear. When I saw this picture for the first time, I about died..he's so dang cute. 


At work, I got to see so many neat halloween costumes. We had a chili cook off and gave out candy for the community trick or treat with the patients. It was a fun 8 hour work day. Yay for holidays.

After passing candy at work, I headed over to the Carters to see my beautiful nieces and nephews dressed up.  They went trick or treatin around the holladay neighborhoods, it was fun to watch. This was a snap shot just before we all took off for our festivities of t-o-t, and sis-in-law Lizzy headed out on a date. 



Came home to this sweet smile. What a great guy for going to his late night class during the halloween festivities. Joe prepared pulled pork on sunday for his halloween work party monday. He said it was a success, and the best batch yet. :)

7 months

Tampa Florida


Been out 7 months. From almost all the letters that Mike sends home,  he expresses how truly bless his life is and has been. He's a great example to me. Sometimes I forget how truly blessed I am. I'm so grateful for the goodness the gospel brings in my life and how blessed me and my family truly are.  


It's great to hear he's doing well and loves serving the lord.  I am so proud of him and his decisions.

Happenings..

**Enjoying this time of year. Can't wait for the trees to look like these. Isn't it beautiful?

**Accepted a 2nd job at Salt Lake Regional Hospital. Got my feet wet and worked the Surgical/ medical unit for 5 hours today...and absolutely LOVE IT. I applied only doing this for my future career and to get hospital experience. At first, I was feeling hesitant in accepting the offer. I stepped on the unit this morning still feeling uneasy, but I dove right in to all the exciting things and it felt great! Holy Mollie, I think I was born to work in a hospital..mm?

**Conference! Very ready to feel uplifted and inspired.

**Sleeping in this weekend. So thankful to rest up and have time with my hubby. Our schedules are opposite from each other, and miss each other for most week day mornings to just hang out.

**Feeling better. Getting over a bad cold that lasted about a week. I still am recovering, but feeling much better. Grateful for my health and wellbeing.

**Joe and I are happy that our hard work is paying off...A'ced our first tests of the semester!

**Have planned out next weeks menu. :)

**There's more decorating to be done tomorrow. I love change in my house. I plan on putting up some more fun october stuff. Adding and taking down things. And getting organized in our second bedroom. It's on the list of many things to do. Our second bedroom is just a mess and I would like for it to be utilized maybe as an office/craft/storage rm. mm? I don't know what I can do,..but organization is what it's lacking.

**Family gatherings. I love getting together with family no matter whats planned or not planned. Looking forward to sunday at the Carter Folks.

Week One

This semester, I've set a goal to designate Tuesday and Thursday @ 7pm to prepare/serve a meal following a new recipe. I was a little bit apprehensive with setting this goal because I've never had a passion for cooking, I tend to stay in my comfort zone by preparing the same meals, I lack confidence in my cooking ability and I fear failure. Ok. Lets face it, I'm a horrible cook, and haven't enjoyed it for that reason. This first week was nerve racking although successful. No appliance broke, nothing burned, no injuries, no food poisoning...pheww. I must be on the right track. 
..Most importantly Joe enjoyed it. 
Before doing anything to prepare meals, I did some research and found some great menus and tips here that helped me in the process. This first week I've learned so much already. 
Week One: On the menu.
Tuesday Sept 20: Pork Chop Sandwich 
This is surprisingly unique. I never would have considered making a sandwich out of a browned pork chop, red onions, cucumbers and cilantro. Odd, I know.  But pair these tasty ingredients with savory chile sauce, mayonnaise, and a sprinkle of lime juice, and you’ve got yourself a great sandwich.

4 boneless pork loin chops, cut 1/4 inch thick
4 (7-inch) French bread baguettes, split lengthwise*
4 tsp. mayonnaise, or to taste
1 oz. chile sauce with garlic
1/4 c. fresh lime juice
1 small red onion, sliced into rings
1 medium cucumber, peeled and sliced lengthwise
2 T. chopped fresh cilantro
Salt and pepper to taste
Preheat oven broiler. Place the pork chops on a broiling pan and set under the broiler.  Cook for about 5 minutes, turning once, or until browned on each side.  Open the French baguettes (i used french bread) and spread mayonnaise on the insides.  Place one of the cooked pork chops into each roll.  Spread chile sauce directly on the meat.  Sprinkle with a little lime juice and top with slices of onion, cucumber, cilantro, salt and pepper.  Finish with another quick drizzle of lime juice.

Thursday Sept 22: Sweet and Spicy Crock pot Chicken 

This is one of our new favorite dinners simply because it is soo easy and really tasty! Perfect for a busy night or a day that you don’t want to spend cooking in the kitchen. We love it in burritos, nachos and taco salad. I love that the recipe is so simple. 
Serves 4
1 pound (about 2) boneless, skinless chicken breasts
1 (14-ounce) can petite or regular diced tomatoes, undrained
1/3 cup brown sugar
1/4 teaspoon crushed red pepper flakes (add more if you like extra heat – with this amount it is mild enough for my kids to eat it up but spicy enough to help offset the sweetness)
Place the chicken in the bottom of the slow cooker. In a small bowl, combine the tomatoes, brown sugar and red pepper flakes. Pour over the chicken. Cover the slow cooker and cook on high for 4-6 hours or on low for 8-9 hours. Remove the chicken to a cutting board and shred with two forks. Return to the slow cooker and mix the chicken with the juices from the tomato/brown sugar sauce. Season with salt and pepper to taste. Serve in flour tortillas or over tortilla chips with toppings of choice: lettuce, sour cream, cheese, avocados, etc.

Same Night, Different Game

Avalon Night at Rio Tinto Stadium. FUN NIGHT for REAL fans. One Republic performed after the game. I attended with my co-workers and there family members. There are some die hard fans, I was shocked at how loud the stadium got during some of the plays. 




BYU GAME:

BYU vs UTAH.
